Red Lentil Cacciatore

In brief, Cacciatore means "hunter" in Italian. It means whatever the hunter brings home like chicken, rabbit, herbs, veggies and sometimes wine is used too.

This one pot meal is great vegetarian or with chicken parts or beef chuck.

You will need:

-one medium onion diced

-4 stalks of celery chopped

-4 large carrots chopped

-3 cloves of garlic

-1/2 tsp salt & 1/4th of a tsp pepper

-2 cans of tomatoes crushed

-1lb meat. (I used chicken this past week)

-Red lentil pasta (I use Trader Joes)

* You can use any type of vegetable you would like.


-Brown the meat in Dutch oven with a little olive oil. With the stove on med-high heat, for a few minutes on all sides.

Time to add salt, and onion, celery and carrots. Let them steam up. 

Now add the tomato paste, let simmer alittle. 

Then add diced garlic, pepper, bay leaves, and tomatoes. (Garlic & pepper burn quick with high heat it best to add just before the liquid)

Turn heat down let simmer on low for 45 minutes. Add pasta, let simmer for 12-15 mins. Turn of heat, let cool woth lid cracked open for half hour to cool for serving. This allows the juices to redistribute in to the meat. This is the same as letting the meat rest. This ensures tender meat for fall off the bone quality.
