Lentil loaf recipe

Ever realize that you have a bag of lentils that you have no idea what to do with but, lentil soup is just so boring if you're not in the mood for it.

This is my meatless meatloaf recipe.

I have tested it out on my father-in-law and husband. They're both brutally honest meat lovers. And they were amazed with the outcome.

Let's cut to the chase...

 You will need,

A large bread loaf pan.

Two cups of lentils sorted and rinsed and cooked as directed on bag. Boil with bouillon and then drained.

Six to eight cremini mushrooms diced in a food processor

A fourth of a tsp of salt and 1/8 tsp pepper. (Bullion has salt, so does cheese so be sure to not ove do it.)

A half a medium onion diced small and caramelized- ( 20 min on low heat , stirring occasionally)

3 cloves garlic dice tiny

Two of your favorite bullion's.

Two eggs.

A fourth of a cup of unseasoned bread crumbs. 

One to two tablespoons of milk depending on the consistency of the mix. (Do not over mix!)

1/2 cup cheddar cheese or aged provolone.

1 tbsp of olive oil.

*You can add small tiny diced vegetables and caramelized them with the onions like carrots and celery. 


To start, preheat oven at 350° 

start caramelizing onions this takes at least 20 minutes on low. Pulse mushrooms, oil and garlic cloves in a food processor they should be small pieces not a paste, then add egg and Seasonings.

Place contents from food processor into a bowl then add drained lentils and caramelized onions. Add alittle at first to temper the eggs.

Mix all ingredients except lentils and onion in a bowl then fold the remainder ingredients. Be sure to not over mix. You do not want the texture of paste, but you want a lumpy consistent texture like chop meat.

If your mixture is very crumbly. Add little bit of milk or Your consistency should be a very Lumpy paste texture. 

Place in a preheated oven at 350° degrees for 20 to 25 minutes.  Serves 4 people

You'll know when it's done when it's super steamy and you could stick a toothpick in it and it comes out clean. Let it sit on stove top for to 15-20 minutes to set before digging in.  You can serve with your favorite Brown gravy.
